These are amazing. Really, we like them better than any other waffle we’ve had, and I love getting the veggies into the kids in the morning. At first I made them secretly so they couldn’t see what was going in, because God forbid they eat their vegetables. Well, I got them hooked and now they know the truth. Butternut squash waffles are pretty spectacular. That’s it.
It takes about 15 minutes to make. You can use the same ingredients and make pancakes which I used to do, but then I discovered, the waffles are so much quicker. No standing, and flipping, so the waiting is minimal. Gotta love it, especially when we are trying to get out the door in the morning.
3/4 cup of puree butternut squash
1/4 cup of coconut flour
4 tablespoons of coconut oil or butter
1/2 to 1 tsp of cinnamon depending how much you like cinnamon (optional)
1 tsp of raw honey (optional)
2 tablespoons of shredded coconut (optional)
Combine all ingredients in a blender and pulse until combined. Let rest a minute, so the coconut flour can absorb stuff/ work its magic. Pour 1/4 to 1/3 cup onto your waffle iron, wait, and devour. We like to top them with real Amish butter and honey. This makes about 6 waffles.
Tip: sometimes we omit the honey , coconut and cinnamon and we use it as bread for sandwiches.
