Fish and Cabbage Plate

I made this last night and I love it because it is so easy, and the kids approve.  In fact, my 9 year old said last night that she wished I would make it more often. This one gets five stars out of five at our house, plus I get to use my Paderno Vegetable Spiralizer which never gets old!

Tacos are such an essential in life, and this allows my family to get our taco fix.  I’ve tried a few grain free tortilla recipes, but honestly at this point my kids would rather skip the options I’ve come up with.  I can’t say I blame them.  But you really don’t miss them after while and especially when the meal is as hearty and tasty as this one.

I wish I could say this was my own creation, but alas it wasn’t.  I was inspired by a recipe on another blog called Kayln’s Kitchen.

In order to keep the dish in line with what’s best for our family, I used a different hot sauce for the creamy fish topping that didn’t contain sugar.  I didn’t make guacamole, but used sliced avocado in an effort to save time (I am subbing full days this week unexpectedly and would have put more thought into meal planning had I known!).  I also don’t use a pre-made fish rub so I can avoid ingredients I’d rather pass on.  I just sprinkle with chili powder, cumin, salt, pepper, onion and garlic powder and rub.  You can mix some up ahead of time to have in the spice rack if your super organized!

I never thought I’d see the day when my kids downed a whole bowl of raw cabbage, but miraculously the day has arrived!  Can you say win?!!!!
